How Our IGP Certified Olive Oil is Processed...

Taste the difference with our IGP-Certified Nocellera Olive Oil.


Our Nocellara Olives are hand-picked from the Accardo family’s farm and sent to the oil mill within 24 hours to keep them fresh. At the mill, they are pressed into top-quality oil and labeled with the Accardo family name.

 

We work with M.A.S.A.F., an Italian government agency, to certify our olive oil. They visit our mill, take a sample, and analyze it in their Palermo lab. Once approved, we let them know how many bottles or tins we need, and they print the exact number of labels with unique serial numbers. These serial numbers are tracked by the government. (Italy takes their olive oil seriously.)

 

We then bottle the same amount of oil as we have labels – no more, no less. This way, we can proudly put the IGP symbol on our Nocellara Olive Oil.
