How We Preserve our Olive Oil

In order to preserve the polyphenol’s in our olive oil we follow strict guidelines to ensure you are receiving the most nutrient dense, fresh product.

 

Our olives are harvested and brought to our mill to be cold-pressed within 24 hours of being picked. Elements like heat, air, and light instantly degrade the hydroxytyrosol. We cold-press our olives to avoid adding any heat to our oil. Our signature dark green bottles prevent light from penetrating our olive oil and further degrading the hydroxytyrosol levels.

 

Polyphenol and hydroxytyrosol are best produced under high altitude stress. Our 50 acre olive tree farm is located 500m above sea level. It is no accident that our olive oil provides some of the most amazing health benefits to those who use it on a daily basis.
